RECIPES

All these "English" recipes are tried and true. Clearly, we have more cooking to do!

  • Shortbread - not the official "Ted Lasso" recipe (though that's on our list to bake). We love having shortbread with a cup of decaf tea after dinner; makes us feel appropriately British. Recipe courtesy of Smitten Kitchen -- yes, we should probably try a British version, but I just love Deb's recipes. 

  • Lemon Drizzle Cake - we made this twice in one week and it's my son's favorite. The recipe is a spin on Nigella Lawson's. If you want a thicker glaze, use less lemon juice than called for (or possibly smaller lemons?)

Next on my list, Mary Berry's easy Victoria Sponge Cake and of course, fruit scones. We had clotted cream on scones for the first time in the Costwolds and I can't believe it's not more popular in the States; clotted cream is a thick, sweet butter-like spread but even more amazing - I could eat it with a spoon, but settled for a huge slather on my scone with jam.

UPDATE - I made scones! I used a recipe from a cookbook I received for Christmas (Royal Teas cookbook) but added fruit. I made these on New Year's Day and it was fairly easy. Here's a short video of the process.
